Vegetarian Dal Recipe

This is a great “dump” meal.  You can take any of the leftover vegetables from your refrigerator and dump them into this recipe to minimize waste.  You can also use frozen vegetables in this recipe!  This is a great meal to use when you are not able to grocery shop and you have frozen and dried food at home.  Enjoy!

Ingredients: 

1 tbsp garam masala
2 tsp turmeric
1 tbsp chili powder
1 tbsp salt
1 tbsp curry powder
2 tsp cumin
2 tsp powdered ginger
1 tsp pepper
2 Vegetable bouillon cubes
1 cup dry red lentils
3 cups water
1 medium onion chopped
2 zucchini squash slices
1 sweet potato cubed
3 cloves garlic minced
2 cups spinach wilted
1 cup green beans diced
2 beef steak tomatoes diced

Directions:

1.) combine all spices above (garam masala to pepper) in a bowl and set aside

2.) bring 3 cups of water to a boil with vegetable bouillon cube in it.  Once at a boil add in red lentils cook for 20 minutes or until tender

3.) add cubed sweet potato to a large skillet with some olive oil and cook until fork tender (15 mintues) .  Add in garlic and onion and cook for 5 minutes until translucent.

4.) Add in all spices and vegetables to the large skillet and cook until all vegetables are tender (10 minutes)

5.) pour red lentils into large skillet and then serve.

6.) You can top with shredded chicken if you are not a vegetarian.  Other good toppings are greek yogurt, sour cream or green onions.
