During the winter months it is hard to find in season produce. The staples are usually root vegetables. We often forget that cabbage is a hardy cold weather plant that is in season right now. Cabbage has many health benefits. It is a low calorie vegetable that has only 22 calories per cup, it is packed full of vitamin C and Vitamin K, and is a good source of fiber. Cabbage is a culinarily diverse vegetable. You can cook it in almost any different way and it can be paired with almost any other food. It fits into Mexican, Asian, European and American cuisine.
